Today I’m taking you guys on a culinary adventure and sharing a few of the recipes I make almost every week. I’m always so curious what other people cook on the regular vs. what we all pin on Pinterest đ  I love to cook and this year one of my resolutions is to cook more at home. Our kitchen in Mississippi (where we lived last year) was so unglamorous compared to what we have now — so I have no excuses!
I love seeing the food my friends post on Snapchat and Instagram — it always motivates me to get cooking myself! So in the spirit of that I’m sharing some of the photos I’ve posted on Snap/IG and a few others. I’m notoriously horrible for following exact measurements in recipes so I’m going to share with you guys just what’s in each dish.
AVOCADO TOAST
This one may seem obvious because it feels like everyone is crazy for avocado toast nowadays! I’ve been making this for so many years and it never gets old. Last week I had it every single day.
What’s in it:
avocado
fresh lemon juice
fresh cilantro
salt & pepper
lemon pepper
high quality bread (my FAV right here, read their backstory)
QUINOA BOWL
I posted this quinoa bowl on Instagram last week. My brother Bruce got me hooked on quinoa. It can go with so many things. I’ll often substitute it for rice.
What’s in it:
quinoa cooked with chicken broth
cherry tomatoes
bacon
two spoonfuls of pesto
hard boiled eggs
salt & pepper
ZUCCHINI PANINI
Oh my gosh this zucchini panini was amazing and packed full of flavor! Pretty much I looked in my fridge and threw a bunch of ingredients together.
What’s in it:
high quality bread
thinly sliced zucchini
tomato basil cheese
cherry tomatoes
pesto
arugula
kalamata olives
How to make: thinly slice your zucchini and cook it in a skillet with butter until it’s soft and starts to brown. then assemble your panini with all of the above ingredients. place in a skillet with butter and and cook until both sides start to brown. flatten your panini with another skillet or canned goods.
LATTES
So much coffee, so little time ⼠ We got a nespresso for Christmas and it’s made everyday so much fun! A few fun ways you can spice up your coffee/espresso routine is getting a syrup that they use at coffee shops and a milk frother. We haven’t been to Starbucks since we’ve gotten our espresso machine because we can make lattes at home now.
PARMESAN MACARONI AND CHEESE
I found this recipe on Pinterest and it was so successful I wanted to share it with you guys. I adapted the recipe by using a different kind of pasta and left out the spinach.
What’s in it:
orecchiette pasta
parmesan cheese
heavy cream
butter
flour
pesto
STRAWBERRY AVOCADO POPPY SEED SALAD
YUM this salad is packed full of flavor and will leave you feeling satisfied.
What’s in it:
power greens
strawberries
flax seeds
avocados
feta cheese
poppy seed dressing
FRITTATA
Michael and I usually make a frittata if we’re totally sick of eating fried or scrambled eggs. Frittatas have a delicious quiche like consistency but there’s no need to fuss with a crust.
What’s in it:
eggs
heavy cream
cherry tomatoes
basil
lemon pepper
salt & pepper
parmesan cheese
You can throw almost anything into a frittata (potatoes, peppers, sausage, etc). IÂ always wing it when I make them, however this is a good basic recipe to follow.
