Cute Make-Ahead Egg Muffins

So, I amĀ always on the hunt for simplifying daily routines. Weekday breakfasts are kind of a hot mess around here because Michael’s days start reallyyyy early. We’re not really that into cereal — a breakfast a with little more effort is def our cup of tea. But there’s no way Michael has the extra time in the morning to cook anything and I’m not about to get in the kitchen at 6am for anything other than coffee (sorry not sorry, bebe).


Sometimes I make these cute (and they are cute, aren’t they?) little egg muffins on the weekend, and then freeze them. I wrap them in plastic wrap and they keep for a few days. Michael grabs a few on his way out the door, and warms them up at the squadron. Voila! A hot breakfast. Am I wife of the year yet??

I’m usually not one for “meal prepping” because I like to mix it up everyday, but these are the best hack for busy mornings.

These are kind of embarrassingly easy. This is the deal:
The ones I make are super basic. What’s fun with egg muffins is you can add pretty much anything to them! Bacon, onions, potatoes, peppers, all kinds of cheese….get you get the idea.

Muffin pans traditionally have 12 cubbies — so I use 12 eggs. I always match the cubby/egg ratio.

Nonstick spray
12 eggs
1 package of turkey sausage links
Handful of cheddar cheese
Salt and pepper

Preheat your oven to 375F.
Chop the sausage links into bite size pieces. Turkey sausage links are usually already cooked.
Scramble the 12 eggs in a mixing bowl. Add the cheddar cheese and sausage links. Mix together.
Spray your muffin pan with the nonstick spray, and then evenly distribute the egg mixture into the muffin pan.
Pop it in the oven and bake them for 15-17 minutes. All done!
If you’re wanting to use these for later in the week, wrap each one individually in plastic wrap and put them in the freezer. Michael says they get a little spongy if you keep them for more than 4 days, so eat up. This is the most basicĀ version of this recipe. So feel free to go crazy.
