Hello Everyone!
The past week has been very exciting. I just moved to Washington DC for the summer — I’ll be interning for a think tank here! So excited. While I’m here I’ll be living in an adorable townhouse literally right next to the SUPREME COURT. Insane.
I’m sharing one kitchen with a bunch of other college students and recent grads. The living situation reminds me of my dorm-room days.
In honor of this I wanted to share a really easy recipe with you all, it’s so easy that it’s even possible to create in those under-furnished and over-used dorm basement kitchens or communal living situations. I made this easy and delicious artichoke dip with only 3 ingredients! I can’t promise it’s healthy, however there is minimal cleanup and it’s sure to be a crowd pleaser.
The recipe:
Ingredients/supplies:
- 1 cup of grated parmesan cheese
- 1 cup of mayonnaise
- 1 large jar of artichokes
- Crackers to dip — my personal favorites are Wheat Thins or Triscuits
- Shallow baking dish
Directions:
Chop the artichoke into bite sized pieces.
Combine the artichokes, cheese and mayonnaise and mix thoroughly.
After the dip is thoroughly mixed, spread evenly into a baking dish.
Place in the oven (400 degrees) and bake for 20 minutes or until the dip is golden and bubbling.
Voila! Eat and enjoy with those you love.
